摘要 <P>PROBLEM TO BE SOLVED: To search the possibility of the presence of a browning-causing tyrosinase gene except tyrosinase genes melO and melB, and specify the gene. <P>SOLUTION: A new tyrosinase gene melD was cloned, and its base sequence was determined. The cloned new gene was inserted into a vector to transform a host (Escherichia coli). Thereby, the gene has the activity of tyrosinase and can be used for preventing the browning of Sake malt and the coloration of a fermented food. The transformant can be cultured to produce the tyrosinase. The tyrosinase can be utilized not only as a reagent but also for screening an inhibitor.
