PROBLEM TO BE SOLVED: To provide a method for producing hardly caking sodium hydrogencarbonate (sodium bicarbonate) suitable in the fields of food, medicine, and bath salts and requiring no addition of an anticaking agent. SOLUTION: (1) Wet sodium hydrogencarbonate particles are kept in contact, for 1-20 min, with a drying gas containing at least 5 vol% carbon dioxide gas, having a water content corresponding to a dew point of 50°C or lower, and being kept at 50-400°C. Otherwise, (2) wet sodium hydrogencarbonate particles are kept in contact, for 1-120 min, with a first drying gas containing at least 5 vol% carbon dioxide gas, having a water content corresponding to a dew point of 55°C or lower, and being kept at 50-400°C and then are brought into contact, for 1-120 min, with a second drying gas containing at least 3 vol% carbon dioxide gas, having a water content corresponding to a dew point not higher than that of the first drying, and being kept at 350°C or lower and at a temperature lower than that of the first drying gas.
