<P>PROBLEM TO BE SOLVED: To provide a method for cooking a vegetable, by which a processed food, such as a healthy seasoning, having a roasted food texture and a body without using a fatty oil or a fat and having a reduced fatty oil or fat content. <P>SOLUTION: This method for cooking the vegetable is characterized by using salt as a heating medium to thermally cook the vegetable.
