PROBLEM TO BE SOLVED: To provide a cooking apparatus for bread using frozen dough designed to carry out a series of steps from freezing and preservation of the frozen bread dough to thawing, secondary fermentation and baking and quickly cool the interior of a cooking cabinet to a heat insulating temperature with a freezing apparatus after completing the baking, thereby preventing scorching and drying of baked bread from excess baking thereof and maintain as-baked flavor as much as possible even without immediately taking out the bread. SOLUTION: This cooking apparatus for the bread using the frozen dough is equipped with an adiabatic box 3 having heat resistance, a cooking cabinet 2 composed of a door 5 opening and closing at the front for cooking the frozen bread dough, a heating apparatus (12) for heating the interior of the cooking cabinet 2 and a cooling apparatus (28) for cooling the interior of the cooking cabinet 2. The cooking apparatus is designed to carry out a cooling/heat insulating step with the cooling apparatus after completing the baking step. Furthermore, the apparatus directly cools the interior of the cooking cabinet 2 to the heat insulating temperature and excludes excessive heat at high temperatures in the cooking cabinet 2 when the bread is baked.
