摘要 Protein-containing products are made by subjecting vegetable matter, e.g. greenstuff, fruit, tree leaves and root crops, meat, poultry, or fish to mechanical treatment which involves sufficient pressure for breakdown of the cellular structure and liberation of juice, but which does not result in cutting or grinding of the tissues or fibres, simultaneously separating the liquor formed, washing the residue, and separating a protein-rich fraction from the liquor by flocculation. The flocs may be dried. Examples are concerned with squeezing juice from freshly-cut lucerne, washing the residue, adding the wash liquor to the juice, heating this liquid to 165 DEG F., and separating the flocs so obtained, and with squeezing liquor from filleted cod previously washed in salty water, washing the residue in the liquor, heating the liquor to 180 DEG F., and allowing the flocs so formed to settle.ALSO:Protein-containing animal foods or food supplements are made by subjecting vegetable matter, e.g. green stuff, fruit, tree leaves and root crops, meat, poultry or fish to mechanical treatment which involves sufficient pressure for breakdown of the cellular structure and liberation of juice, but which does not result in cutting or grinding of the tissues or fibres, simultaneously separating the liquor formed, washing the residue, and separating a protein-rich fraction from the liquor by flocculation and precipitation. The liquid from which the flocs have been removed may be employed for washing the residue of a pressed fresh charge. Examples are concerned with squeezing juice from freshly-cut lucerne, washing the residue, adding the wash liquor to the juice, heating this liquid to 165 DEG F., and separating the flocs so obtained and with squeezing liquor from filleted cod previously washed in salty water, washing the residue in the liquor, heating the liquor to 180 DEG F., and allowing the flocs so formed to settle.
