PURPOSE: Functional processed fish products such as surimi containing a functional material having no significant adverse side effects while exhibiting excellent palatability are provided. It has no fish-like smell and can be used as a raw material of fish pastes. CONSTITUTION: The processed fish products are prepared by adding a functional material to fish chunks. The functional material is obtained by mixing nutraceuticals, fruits such as plums, ginger, grapes or the like, cereals, vegetables, fruits, tourmarine, loess, charcoal or the like and then fermenting for 1 to 6 months at 15 to 45deg.C. The nutraceuticals contain polysaccharides of ginseng and mushroom extract, minerals, fermented organic material of animals and plants, physiologically active materials of plants, animals, birds, bacteria and carbohydrates or the like.
