PURPOSE: Fermented soybean paste(toenjang) obtained by adding a fermented product prepared by fermenting nutraceuticals, cereals, vegetables, fruits, tourmarine, loess, charcoal and the like to conventional fermented soybean paste is provided. It controls a vital function, prevents various diseases and improves nutrition while having characteristic taste and flavor of fermented soybean taste. CONSTITUTION: The functional fermented soybean paste is prepared by mixing conventional fermented soybean paste with a fermented product. The fermented product is obtained by fermenting nutraceuticals, cereals, vegetables, fruits, tourmarine, loess, charcoal and the like. The cereals are rice, barley, foxtail millet, oat, Vigna sinensis, buckwheat, sorghum, red-beans, mung beans and the like. The fruits are plums, ginger, grapes, bananas, pears, pineapples, jujubes, chestnuts, apples, melons, water melons, persimmons, apricots, peaches, cherries, grapefruits, tomatoes, cucumbers, carrots, garlic, onion, leeks, lettuce, broccoli, cactus, Angelica archangelica, aloe and the like. The nutraceuticals are ginseng extract, mushroom extract and powder, fermented organic material of animals and plants, physiologically active materials of plants, animals, birds, bacteria and carbohydrates or the like. |
