A method is provided for the production of reconstituted fish roe-like products, the method comprising homogenizing a mass of fish, such that a substantially homogeneous liquid fish mass is produced, and forming alginate-based particles from said liquid fish mass such that reconstituted alginate-based fish roe-like particles are produced. The invention also provides products produced by the method, as well as novel products comprising mixtures of reconstituted fish roe, natural fish roe and/or artificial fish roe. |
