In the present invention, there is disclosed a continuous fat spread comprising 10 to 65 percent by weight of a continuous fat phase and 90 to 35 percent by weight of a dispersed aqueous phase wherein the aqueous phase comprising a gelling amylose containing starch having rheological properties characterized by aGleq of 400.10e-5 N/cme2 or greater and a critical strain /{gamma}.icr/ of 12 or greater at a temperature of 10 degC wherein amount of anhydrous starch substances amounts to 10 percent by weight. |
