PURPOSE: Functional kimchi prepared by adding fermented products of a functional material to kimchi during the preparation of kimchi is provided. It is effective in maintaining good health and improving immunity while having characteristic taste and flavor of kimchi. CONSTITUTION: Nutraceuticals are mixed with fruits such as plums, ginger, grapes, bananas, pears, pineapples, jujubes, chestnuts, apples, melons, water melons, persimmons, apricots, peaches or the like and cereals and fermented for 1 to 6 months at 15 to 45deg.C to give a functional material, which is mixed with a conventional kimchi material to make kimchi. The nutraceuticals contain ginseng extract, mushroom extract and powder, fermented organic material of animals and plants, physiologically active materials of plants, animals, birds, bacteria and carbohydrates or the like.
