<P>PROBLEM TO BE SOLVED: To provide an amylomaltase of which the reactivity to a substrate is increased and/or the hydrolysis reaction is reduced or eliminated. <P>SOLUTION: Amino acid residues existing in a region interactive with an acarbose inhibitor which is thought to be important in enzyme reaction are modified in an amino acid sequence of the amylomaltase. The amylomaltase of which the reactivity to the substrate is increased and/or the hydrolysis reaction is decreased or eliminated is provided by the modification.
