摘要 <P>PROBLEM TO BE SOLVED: To provide a method for efficiently producing a fermented product, capable of efficiently producing the product containing pericarps of a fruit the bitter taste of which is reduced and to which active ingredients are added by fermentation. <P>SOLUTION: This method for producing the fermented product containing the pericarps of the fruit comprises fermenting the fruit and/or the pericarps of the fruit containing a substance having bacteriostatic action, wherein the method includes a process for deactivating the bacteriostatic action. A heat treatment, a salt treatment or a combination of the treatments is conducted for the purpose of deactivating the bacteriostatic action.
