<P>PROBLEM TO BE SOLVED: To provide a method for efficiently producing a fermented product, capable of efficiently producing the product containing pericarps of a fruit the bitter taste of which is reduced and to which active ingredients are added by fermentation. <P>SOLUTION: This method for producing the fermented product containing the pericarps of the fruit comprises fermenting the fruit and/or the pericarps of the fruit containing a substance having bacteriostatic action, wherein the method includes a process for deactivating the bacteriostatic action. A heat treatment, a salt treatment or a combination of the treatments is conducted for the purpose of deactivating the bacteriostatic action. The method decreases loss of the active ingredients contained in the pericarps of the fruit, and therefore efficiently produces the fermented product. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
