<P>PROBLEM TO BE SOLVED: To provide an instant-type scrambled egg dried by microwave radiation and eatable by reconstituting with hot water poured on the dried food and solving the problems of conventional freeze-dried food comprising the deficient voluminousness caused by the reconstitution with hot water while keeping the original size and of a microwave-dried food produced by using hen's eggs such as dried whole egg and liquid whole egg as a raw material, kneading the main material with starch, vegetable oil, etc., as subsidiary raw materials and heating the mixture with microwave radiation and giving a product having not sufficiently satisfiable appearance and palatability. <P>SOLUTION: The dried food is produced by kneading a dough containing a swelling agent under a reduced pressure of ≤160 torr, heating by microwave radiation and crushing the heat-treated product. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
