<p><P>PROBLEM TO BE SOLVED: To provide a method for producing dried persimmons sufficiently ripen, sterilized and deaeratedly wrapped, having good taste and excellent in color, where omission of parboiling and sun-drying processes simplifies the process and shortens the days required for completion of the dried persimmons. <P>SOLUTION: The method for producing dried persimmons comprises the following process: subjecting fresh persimmons to natural after-ripening, paring the persimmons, forming a range of the pared persimmons, hooking the range of the persimmons on a drying rack or a drying place followed by drying the persimmons with far-infrared radiation rays, and subjecting the persimmons to ripening, sterilizing and thereafter deaeration wrapping. During natural after-ripening, the harvested fresh persimmons are treated inside a room so as not exposed to the direct sunshine for 3-7 days. The persimmons may be dried in far-infrared radiation rays inside the room where the periphery of the range of the persimmons hooked on the drying rack or the drying place is shielded from open air and an evaporation aluminum cover is stretched around. <P>COPYRIGHT: (C)2004,JPO&NCIPI</p> |
