摘要 <P>PROBLEM TO BE SOLVED: To provide the basic technology for extracting the components included in mushrooms having aromatic flesh, particularly extracting antitumor amino acids or rare aromatic components from Matsutake mushroom, (Tricholoma matsutake), Hatsutake mushroom (Lactarius hatsudake), Shiitake mushroom (Cortinellus shiitake) or Maitake mushroom (Grifola frondosa), then concentrating the essence and purifying without deterioration of the components from mushrooms. <P>SOLUTION: As the extraction temperature for aromatic flesh mushrooms are set in the range from plus 30&deg;C as the upper limit and to -60&deg;C, a superlow temperature, as the lower limit, the aromatic flesh mushrooms are saturated with an ethanol-based organic solution, the solution including mushroom components is condensed to effect the exudation.
