<p><P>PROBLEM TO BE SOLVED: To provide a method of making effective use of the waste such as garbage and scrap wood as resources by producing an organic acid such as gluconic acid from the waste with high selectivity at a high speed in a high yield. <P>SOLUTION: The organic acid such as gluconic acid can be produced from the waste by adding inorganic salt such as calcium carbonate and magnesium carbonate to the waste and subjecting the salt-added waste to hydrothermal reaction so that cellulose and glycol contained in the waste are decomposed selectively at a high speed in a high yield.
