摘要 <p>The inventive method for dispergating fleshy fruits consists in loading raw material in a vertical and round inside flow device, filling an intake pipe and the cavity of a pump with a fluid medium and in dispergating the raw material by pumping it through a recirculation circuit associated with cavitation and heating thereof at the device input, spirally twisting the flow inside the device, degassing and in discharging product for packing and sealing. Said flow device is connected to the pump by the bottom part thereof with the aid of the intake pipe and by the top part thereof with the aid of a delivery pipe provided with a cavitating means. In order to reduce the possibility of thermal-oxidative destruction of nutritive substances, the suspension is twisted in spiral inside the device and is supplied to the recirculation circuit through the central hole in the bottom of the device. Degassing is initiated prior to the occurrence of an axisymmetrical funnel in the mass of the twisted suspension. Said suspension is heated to a predefined temperature, the recirculation being stopped and product discharged. The inventive device for carrying out said method comprises a flow unit whose cross section reduces from the top downwards and a through hole in the bottom part thereof for connecting said flow unit to the intake pipe of the pump.</p>
