PURPOSE: A method for removing a chicken skin with fat is provided to simply remove the fat attached to a chicken skin for 3-5 minutes using a knife, without boiling the chicken, for the fresh quality of chicken meat. CONSTITUTION: The method for removing a chicken skin with fat comprises a step of removing fat in the skin of a chicken piece as cut in about 5cm size such that the fat of 150g from one chicken being about 1 kg in weight is removed for 5 minutes to keep a freshness of the chicken meat. The blood from one leg of a chicken is removed by piercing the leg with scissors during frying the chicken, then time is reduced.
