PURPOSE: A temperature control apparatus of a gas burner and a temperature control method, using the temperature control apparatus are provided to improve the efficiency of the gas burner through optimization of the combustion state of the gas burner by executing cooking while keeping the heating temperature of an object to be heated uniform. CONSTITUTION: A temperature control apparatus of a gas burner comprises a temperature sensor(20) installed to a burner part(10) heating an object to be heated, to sense the temperature of the object; a control part comparing the temperature of the object sensed from the temperature sensor with predetermined temperature and outputting a control signal; an automatic gas valve(30) adjusting the amount of gas supplied to the burner part by the control signal transmitted from the control part; and an air adjustment fan(40) adjusting the amount of air supplied to the burner part by the control signal transmitted from the control part.
