PURPOSE: A method of making tea taffy by adding powder of green tea, black tea or red tea to a taffy material is provided. The product is reinforced in palatability, nutrition and physiological activity and can be used as a favorite food. CONSTITUTION: Rice is immersed in water, mixed with powder of green tea, black tea or red tea and heated to produce hard-boiled rice, which is mixed with malt, saccharified for 7 to 10hr at 60 to 80deg.C and then filtered. The saccharified mixture so produced is squeezed, filtered and concentrated, followed by cooling to produce tea taffy. The taffy is added with ginger or sesame powder and expanded two times.
