PURPOSE: A method of making a flat pancake(hottok) as a Chinese stuffed pancake by adding wormwood powder during the manufacture of hottok dough is provided. The product does not smell of wheat flour after being chilled and has a chewy texture. CONSTITUTION: Wheat flour, glutinous rice flour, yeast, salt and sugar are mixed and then added with 5 to 15% by weight of wormwood power, based on the total weight of the wheat flour and glutinous rice flour to give dough material, which is added with 70 to 80% by weight of water, based on the total weight of the dough material and then allowed to stand at room temperature until it swells two times beyond its original volume to give dough. Thereafter, the dough is stuffed with stuffing material and roasted in a fan. The stuffing material is prepared by mixing sugar, peanut powder, vanilla flavor powder and wheat flour. |
