The broad bean (1) has a channel of circulation of air (3) crossing through the bean. The channel is formed in the bean by lying a metal stem coated with anti-blocking coating e.g. polytetrafluroethylene in a mould. A sedimentary paste is introduced into the mould placed in a cooking medium and the stem is removed before the paste is hardened to from the channel of circulation of air. An Independent claim is also included for a process of fabrication of the perforated broad bean.
