<P>PROBLEM TO BE SOLVED: To provide an antioxidant for food giving food excellent oxidation stability for a long period without using a chemical antioxidant giving fear of effect on a living body, and to provide an oil-in-water emulsion food eatable by consumers at ease without avoiding and excellent in oxidation stability for a long period. <P>SOLUTION: This antioxidant (1) for food comprises a protease treated product of water extract of cabbages. The oil-in-water emulsion food (2) excellent in oxidation stability and having emulsified water phases and oil phases contains the antioxidant for food comprising the protease treated product of water extract of cabbages. A method (3) for producing the oil-in-water emulsion food excellent in oxidation stability and having emulsified water phases and oil phases comprises using the antioxidant for food comprising the protease treated product of water extract of cabbages. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
