MICROCAPSULE CONTAINING WATER-SOLUBLE ISOFLAVONE, PRODUCTION AND APPLICATION THEREOF

PURPOSE: A method of applying microcapsules by encapsulating water-soluble isoflavone which has been inconvenient to directly take because of its unique functional properties and adding microcapsules to functional food such as milk, drinks, yogurt or the like is provided. The isoflavone microcapsules make it easy to take isoflavone without lowering functional properties of milk when added to functional food, in particular milk. CONSTITUTION: The microcapsules with a diameter of 2 to 5 micrometers contain 10 to 40% by weight of water-soluble isoflavone on the basis of microcapsule weight. The microcapsules are prepared by the following process: adding water-soluble isoflavone to a coating material; agitating a solution containing the coating material and the water-soluble isoflavone and then spraying the solution to aqueous dispersions containing a surfactant; centrifuging the emulsifier sprayed with the coating material and water-soluble isoflavone to separate an encapsulated part from an unencapsulated part; and centrifuging the encapsulated part after spraying the encapsulated part on the emulsifier.
