<P>PROBLEM TO BE SOLVED: To provide a simple method for producing soy sauce by using above-ground parts of Rumex acetosa as the proteinous material because, when using round soybeans as the proteinous material, processings such as pretreatment and defatting are required, and so, many equipment and much time and labor are required. <P>SOLUTION: The method for producing soy sauce comprises a step (1) for hydrolyzing the proteinous material to obtain an amino acid liquid, a step (2) for neutralizing the amino acid liquid and a step (3) for removing smell of the obtained neutralized liquid in the step (2), wherein the method uses the above-ground parts of Rumex acetosa as the proteinous material. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
