The invention relates to a method of producing a functional protein concentrate from cephalopod muscle and the product thus obtained, which is used in the production of similar products and other novel products. The inventive method consists in separating the myofibrillar proteins, proteases and other constituents, through the isoelectric precipitation of the principal myofibrillar proteins. The aforementioned method has two variations, namely: (i) a first variation which is used to produce a purified functional protein concentrate by means of isoelectric precipitation following the solubilisation thereof; and (ii) a second variation which uses homogenised muscle, without prior solubilisation, in order to produce a purified functional concentrate of lower purity than that produced in (i). The degree of purity does not determine the functionality but the possible subsequent applications. Subsequently, in both cases, inhibitors of proteases and/or cryostabilisers and/or other components can be added to the isolated product and the product is preserved in the frozen state. |
