PURPOSE: A method of making the titled salted fish by spraying a ginseng solution containing sapogenin protopanaxadiol, sapogenin protopanaxatriol or the like on a dressed fish is provided. The product is removed in a fishy smell and has good taste and soft flesh while having pharmacological effect of ginseng. CONSTITUTION: A fish whose intestine is removed is washed and spraying with a ginseng solution containing a ginseng component concentration of 0.25g/L or more. Then, the fish is sprinkled with salt and aged at 2 to 4deg.C for 14hr or more. After aging, the fish is quickly cooled for 5hr at -50deg.C or less and inserted with crushed ginseng. Or the dressed fish can be soaked in the ginseng solution for 5 to 10hr at 30 to 38deg.C instead of the spraying process. |
