PROBLEM TO BE SOLVED: To provide a method for producing rice mash which is suitable as an auxiliary raw material useful for producing liquors and contains amino acids and minerals and from which a smell is reduced or removed.

SOLUTION: The rice mash for producing liquors is produced by hydrolyzing rice and passing the rice mash through a porous amphoteric ion exchange resin at a rate of 0.01-5 SV.
