<P>PROBLEM TO BE SOLVED: To provide an easily producible method for yacon tuber chips with crunchy comfortable palate feeling, capable of adequately ingesting components of the yacon tuber by processing the yacon tuber with remaining peels. <P>SOLUTION: The production process of the yacon tuber chips comprises a step of water-washing harvested yacon tubers, a step of boiling the yacon tubers to eliminate bitterness of the peel of the yacon tuber after washing with water, a step of cooling the yacon tuber after boiling, a cutting step of slicing the yacon tuber for applying discoloration inhibiting treatment after cooling, a step of drying the sliced yacon tuber, and a baking step of baking up the yacon tuber slices to complete the yacon tuber chips. <P>COPYRIGHT: (C)2004,JPO |
