PROBLEM TO BE SOLVED: To obtain tasty dried fish good for health and suppressed in oxidation. SOLUTION: This dried fish is obtained by sticking or infiltrating fresh fish Ume (Japanese apricot) flesh with Mumefural produced by heating pickled Ume, an Ume flesh extract obtained by boiling down unriped Ume or Ume flesh obtained by heating riped pickled Ume to/into fresh fishes in a drying processing of the opened and washed fresh fishes, and then drying the treated fishes after washing or directly.
