The present inventive subject matter relates to novel methods for using water-absorbing and water-retaining LEA Group 1 proteins. Addition of water to an LEA Group 1 protein produces a hydrogel, which is useful in absorbent materials and compositions; as a therapeutic for skin; as a pharmaceutical or cosmetic excipient; in food applications where their hydrophilic properties improve moisture absorption and retention, and reduce the formation of ice crystals upon freezing; as cryoprotectants for maintaining the integrity of biologically relevant molecules upon freezing; and for increasing the resistence of an organism to drought stress, osmotic stress, heat stress, freezing stress, or a combination thereof.
