A sausage (3) sealing assembly (1) has two horizontally-opposed welding heads which forms a seal in the neck between two adjacent sausages. The first welding head (4) has a first welding surface (6) with a concave detent. The second welding head (5) has a wedge-shaped welding surface (7) interlocking with the detent. The angle described by the wedge is esp. narrower than that described by the detent. The wedge is directed upwards towards the concave detent. Also claimed is a commensurate operating process.
