PURPOSE: A method of preserving a globefish in the vacuum state after soaking fresh flesh of globefish in herbal extract and then drying is provided. It permits the long-term preservation thereof while providing flavor and pharmacological action of herbal plants to the product. CONSTITUTION: A globefish whose viscera or the like is removed, is soaked in salt water at 13 to 18deg.C and dried after being washed. An additive comprising 90% by weight of herbal extract and 10% by weight of fruit extract is diluted in fresh water, soaked with the treated globefish for about 30 to 40min and stored in the vacuum state after drying. The herbal extract comprises Puerariae Radix, Angelicae Koreanae Radix, Sophorae Radix, Raphani Semen, Arecae Semen, Pinelliae Rhizoma, Adenophorae Radix, Cimicifugae Rhizoma, Bezoar bovis, Ginseng Radix, Cnidii Rhizoma, Alismatis Rhizoma, Cyperi Rhizoma, Glycyrrhizae Radix, Angelicae Gigantis Radix, Cervi Parvum Cornu or the like.
