PURPOSE: A device and method for frying bean curd is provided to improve the flavor of fried bean curd by preventing the temperature of cooking oil from dropping. CONSTITUTION: A device for frying bean curd is composed of a chamber(11) formed in a body(10), a conveyor(12), a cover(21) having a steam discharge port(22) and covering the chamber, a discharge tube(16) communicated with the bottom of a cooking oil layer(18), an introduction tube(17) communicated with the top of the cooking oil layer, and a circulation refinery(15) installed between the discharge tube and the introduction tube. The cooking oil layer and a water layer(19) are formed at the top and bottom of the chamber. A heater(13) is installed at the lower part of the cooking oil layer. A cooling pipe(14) is installed at the upper part of the water layer. The conveyor is installed above the heater, and passes through the cooking oil layer. |
