摘要 PURPOSE: Buckwheat fermented with fungi Monascus species is provided, thereby comprising both of rutin derived from buckwheat(Fagopyrum esculentum Moench) and monacolin K derived from fungi Monascus species, all of which are useful for human health. CONSTITUTION: The method for preparing buckwheat fermented with fungi Monascus species comprises the steps of: dipping buckwheat in water having 22 to 23 deg. C for 18 to 20 hours; germinating the dipped buckwheat at 24 to 26 deg. C for 16 to 18 hours with spraying germanium water at an interval of 8 to 10 hours; drying the germinated buckwheat at 50 deg. C; inoculating fungi Monascus species into the dried germinated or ungerminated buckwheat; and fermenting the dried germinated or ungerminated buckwheat, wherein the fungi Monascus species is Monascus ruber.
