<P>PROBLEM TO BE SOLVED: To provide a method for producing a vegetable pudding having good flavor and good preservability by a simple pasteurization; and to provide the vegetable pudding. <P>SOLUTION: The method for producing the vegetable pudding involves a step for heating and pasteurizing a mixture of a vegetable and a milk product by a direct heating type pasteurizer having a vacuum chamber.
