摘要 <P>PROBLEM TO BE SOLVED: To provide a technique for producing noodles or dough of a food such as a casing of a meat dumpling or a steamed meat dumpling by which the texture is improved and practicality is excellent without causing discoloring or lowering of a taste. <P>SOLUTION: The method for producing the dough of the food such as noodles or the casing of the meat dumpling or the steamed meat dumpling is to produce the dough for forming the food such as noodles or the casing of the meat dumpling or the steamed meat dumpling by adding a polyphenol to wheat flour. After adding the polyphenol to the wheat flour, salts or an alcohol is added therein.
