摘要 PURPOSE: Foaming liquor with the beer taste using roasted rice flour and roasted barley and a preparation method thereof are provided, thereby preparing the foaming liquor with the beer taste without using malted rice, and increasing the taste of the foaming liquor by adding fruit juice, cocktail materials and spice into the foaming liquor. CONSTITUTION: The method for preparing the foaming liquor with the beer taste comprises the steps of: (a) adding purified enzyme into the roasted rice flour and wheat flour and liquefying and saccharifying the mixture; (b) adding purified enzyme into roasted barley and liquefying and saccharifying the roasted barley; (c) independently filtering the liquefied roasted rice flour/wheat flour solution and liquefied roasted barley solution; (d) mixing the filtered liquefied roasted rice flour/wheat flour solution with the filtered liquefied roasted barley solution, and adding inorganic salt into the mixture; (e) sterilizing the inorganic salt added mixture; (f) adding yeast into the sterilized solution and pre-fermenting it; (g) removing yeast and remained fermentation materials, and maturing the pre-fermented solution at low temperature; and (h) filtering the matured solution and adding hop and carbon dioxide into the filtered solution, wherein the inorganic salt is selected from ammonium sulfate, ammonium phosphate, potassium phosphate and magnesium sulfate.
