<P>PROBLEM TO BE SOLVED: To provide a method for easily producing low-fat fiber-enriched snacks through using specific branched maltodextrin. <P>SOLUTION: This method for producing the fiber-enriched snacks comprises a process of introducing to a final product 1-30 wt.% of branched maltodextrin having 1→6 glucosidic bond of 15-35%, reducing sugar content of less than 10%, molecular weight Mw of 4,000-6,000 g/mol and mean molecular weight of 2,000-4,000 g/mol. <P>COPYRIGHT: (C)2004,JPO |
