<P>PROBLEM TO BE SOLVED: To provide a flavoring composition having a flavor of bread in order to obtain bread having a flavor of excellent bread even in short-time bread making or in bread making using frozen dough. <P>SOLUTION: The flavoring composition contain derivatives of aliphatic alcohols, aliphatic aldehydes, aliphatic ketones, esters and derivatives of benzene and furan, and also contain carboxylic acids and compounds containing sulfur in addition to the said compounds. <P>COPYRIGHT: (C)2004,JPO |
