PURPOSE: Provided are kimchi roll sushi and a method for manufacturing the same by using kimchi instead of a fish or a shellfish. The manufactured kimchi roll sushi contains various kinds of nutrients of aged kimchi, promotes digestion, and has antibacterial and anticancer activities as well as the characteristic taste and flavor of kimchi. CONSTITUTION: A method for manufacturing kimchi roll sushi consisting of vinegar mixed steamed rice(10), fresh cucumbers(40), pickled radishes(50), wasabi, and sesame seeds(60) comprises the steps of: manufacturing kimchi and aging it; washing the aged kimchi and dewatering it; mixing steamed rice with vinegar; spreading the vinegar mixed steamed rice on the dewatered kimchi; placing cucumbers and pickled radishes on the steamed rice and adding wasabi and sesame seeds to them; and rolling them with dried laver.
