<P>PROBLEM TO BE SOLVED: To provide a corn starch having an amylose content of higher than 80% and a composition thereof. <P>SOLUTION: The corn starch having an amylose content of 90% or more is formed by means of a hybrid produced by crossing an inbred strain having an ae-amylose increaser gene to the parent line of a corn seed.
