发明名称 METHOD FOR PRODUCING DIET COOKED RICE
摘要 <P>PROBLEM TO BE SOLVED: To provide cooked rice (diet cooked rice) with little caloric intake when being eaten. <P>SOLUTION: This method for producing the diet cooked rice comprises, for producing thickening polysaccharides in a rice tissue structure, a preliminary treatment process of soaking raw rice in a preparation liquid containing sucrose and lactic bacteria having high thickening polysaccharides producing ability, to adjust to produce the thickening polysaccharides in the rice tissue structure and subjecting glucose existing in rice or inverted from the sucrose in the thickening polysaccharides producing process to glucose oxidase treatment, and a resistant starch producing process of subjecting the cooked rice which is made edible after the preliminary treatment process to a prescribed moist heat treatment in a sealed condition. The act of digestive enzymes on rice is hindered by the presence of the thickening polysaccharides. The glucose is changed into gluconic acid by subjecting the glucose to the glucose oxidase treatment and removed to decrease the amount of reducing sugars at an initial state. A part of &alpha;-starch of rice is changed through moist-heat treatment of the edible rice (cooked rice) into resistant starch by annealing (reorganization and recrystallization). <P>COPYRIGHT: (C)2004,JPO
