PROBLEM TO BE SOLVED: To provide a method for producing pizza crust good in such palatability as to have Japanese-fashioned taste liked by people over a wide range of ages without impairing good palate feeling inherent in pizza crust. SOLUTION: The method for producing the pizza crust comprises the steps of adding 1.5-1.8 wt. times water to rice and boiling the rice, cooling the boiled rice to a temperature lower than a normal temperature, and incorporating the boiled rice after cooled with 0.5-0.8 wt. time wheat flour and other pizza crust materials followed by blending at a low speed. The pizza crust 10 thus obtained is such that the soft boiled rice grains 18 are homogeneously dispersed in a crust dough 16 while their shape remained intact. COPYRIGHT: (C)2004,JPO
