The procedure and installation are for the regulation of spraying chains of wax and/or fungicides for post-harvest treatment of fruit, using a system of artificial vision. Images are obtained of the fruit (F) deposited on the input belt (11). This image signal is digitalized and processed with calculation algorithms. A signal of variable tension (V) is generated as a function of the quantity of fruit entering. Once adapted, this signal is used to control the output of wax and/or fungicides of the sprayers (15). The installation has a camera (10) to provide the image signal, an information equipment (12) to digitalize and process the image signal and generate from it a variable tension signal as a function of the quantity of fruit entering. An adapter circuit (13) couples this tension signal to the control circuits (14) of the output of the sprayers.
