In a mixer for fluids, of the type including at least one clamping assembly (1) operable selectively for clamping, in use, a container of fluid products, a device is provided for controlling the clamping of the container which includes sensor means (8) mounted on the clamping assembly (1). The sensor means (8) are disposed in a region of the clamping assembly (4) subjected, in use, to an effort in a predetermined direction due to the compressive forces exerted on the container in the clamping state. The sensors (8) are further adapted to emit a continuous signal proportional to the effort.
