PROBLEM TO BE SOLVED: To control and optimize a freezing process according to a kind of an ice cream mixture used in an ice cream freezer. SOLUTION: The ice cream freezer is so structured that a freezing cylinder exchanges heat with an evaporator of a freezing circuit and an agitating/scraping element is rotated by a suitable electric motor in the freezing cylinder. Further, the freezer has a processor, sensors for continuously detecting values of temperatures of a refrigerant gas at an inlet and an outlet of the evaporator, and a means for continuously detecting values of electric power used in the motor. Furthermore, the values of the temperatures and the values of the electric power used in the motor are continuously input into the processor, a software program in the processor for processing the values outputs signals for driving an impulse solenoid valve, and the valve continuously introduces a heated gas acquired from an exhaust gas of a compressor into a main stream of a refrigerant liquid.
