PURPOSE: Provided is a method for non-heat extracting a grape juice to prevent the grape from being deformed, and obtain a grape juice with the characteristic taste and flavor of the grape. CONSTITUTION: A method for non-heat extracting a grape juice comprises the steps of: crushing grapes into a slurry; adding sugar or oligosaccharide to the grape slurry to sugar content(Brix) of about 50-60 degrees; filtering the grape slurry to obtain a grape juice; and storing the grape juice in a tank for 30 days while stirring it at least once per day for five months.
