<P>PROBLEM TO BE SOLVED: To provide a catechin preparation useful for producing a beverage containing catechin at a high concentration having a good flavor. <P>SOLUTION: The method for purifying the catechin preparation is carried out as follows. The catechin preparation containing 25-40 wt.% of nonpolymeric catechins and obtained by a step of extracting a green tea leaf with water or a mixture of an organic solvent with water is dissolved in a mixture of water with the organic solvent and the organic solvent is added thereto. Thereby, the ratio of the organic solvent to the water is regulated within the range of (9/1) to (5/5) and precipitates are thereby formed. Solids in the suspension are separated and the organic solvent is distilled off from the residual liquid phase. <P>COPYRIGHT: (C)2004,JPO |
