PROBLEM TO BE SOLVED: To obtain the subject composition having high titer and true meat taste, by including both granule obtained by integrating a brown reaction product derived from a saccharide and an amino acid and a water insoluble material and a peptide. SOLUTION: This composition comprises both granule which is obtained by integrating a brown reaction product derived from a saccharide and an amino acid with a water-insoluble material in the ratio of the brown reaction product and the water-insoluble material of 0.4-8.0 and has <=500 μm particle diameter and <=10% water content and a peptide having 500-50,000 molecular weight. The composition is mixed with onion or meat to give a processed food. |
